The dim candlelit dining room of NOIR, wine glasses catching low golden light on dark oak tables

DIFC · Dubai · Tasting Counter

Fire, smoke and seven courses of quiet drama

Twenty two seats around an open flame. One menu, written each morning at the fish market, and nowhere you need to be until midnight.

The House

A room built for slow evenings

No playlists, no televisions, no rush. Candlelight, a counter of Japanese oak, and a kitchen close enough to feel the heat on your face. Dinner here takes three hours, and it should.

We cook what the tide brings in. Some nights that is langoustine. Some nights it is humility. CHEF RAYAN MANSOUR

The Counter

Close enough to feel the heat

Every plate is finished within arm's reach of your seat. You will see the fish butchered, the fat rendered, the fig leaves torched. Nothing happens behind a wall, because nothing needs to hide.

  • I.The day's catch is chosen at Waterfront Market before sunrise
  • II.Duck and beef rest fourteen days in our salt room downstairs
  • III.Only wood and charcoal. There is no gas line in this kitchen
  • IV.Two sittings a night, so no course is ever waiting on a pass

The Evening

How the night unfolds

The welcome

A cold glass, a warm towel, and the menu read aloud. Phones are welcome; they just tend to get forgotten.

The fire

The binchotan is raked, the first shells hit the grill, and the room goes quiet on its own.

The salt room

Between courses four and five, six guests at a time walk down to see where the duck sleeps.

The slow end

Chocolate, olive oil, smoked salt. The counter clears when you decide it does, not before.

Voices

What the counter hears back

Three hours went by like one. I watched my main course get butchered, cured and torched over two visits. Nowhere in Dubai does this.

The langoustine broth from the burnt shells is the single best thing I ate this year. Quiet, dark, completely confident cooking.

We booked for a client dinner and cancelled the meeting part. You cannot talk numbers while a fig leaf is burning in front of you.
